Taco Cups

Ingredients you need:


1. Cooking spray, for pan
2. 6 tortillas
3. olive oil 1 tbsp.
4. onion, chopped 1/2
5. 1/2 lb of  ground beef or chicken keema 
6. Taco Seasoning 1 tsp.
7. Salt to taste
8. Freshly ground black pepper 
9. Chopped tomatoes
10. 1 cup shredded Cheddar
11. lettuce 1 cup
12. Sour cream, for drizzling

How to make

1. Preheat your oven to 350°. Now grease the muffin pan with cooking spray. Cut out tortillas with a 4″ biscuit cutter. Place a tortilla into each cup of the muffin pan and fold the edges.

2. In a pan heat olive oil. Add onion and cook until softened and lightly brown. Now add ground beef or chicken and mix it with a spoon. Season with taco seasoning, salt, and black pepper and cook until the meat cooked. It may take about 6 minutes. Now drain the fat.

3. Now fill each tortilla with cooked beef mixture, then top with shredded cheddar. Let it bake until the tortillas are golden around the edges and the cheese has melted. It may take about 10 minutes.

4. Serve it and of course garnish with tomatoes, cheese, lettuce, and sour cream.

Alphabet Pizza

Ingredients you need:

• Premade pizza crust
• 2 tbsp. olive oil
• 1/2 tsp. oregano
• Pinch of salt
• 1 1/2 cup of pizza sauce
• Shredded mozzarella 1 cup
• Mini pepperoni 1 cup
• Finely chopped parsley for decoration

How to make

  1. Preheat the oven to 200°C. Place a parchment paper over a baking sheet. Brush olive oil all over the pizza crust and sprinkle with kosher salt and oregano.
  2. Using a cookie cutter, cut out your desired Alphabets. Spread a spoonful of sauce onto each piece and make a top with cheese and mini pepperoni.
  3. Now, bake it until the cheese has melted and the dough is golden. Serve to your kids with parsley leaves.

Easy Veggie Squares:

Ingredients you need:

1. 2 cans/tubes of crescent rolls

2. 1 8oz pkg. Greek cream cheese

3. shredded carrots- 1/2 c.

4. finely chopped broccoli- 1/2 c.

5. finely chopped onion- 1/2 c.

6. Chopped red pepper- 1/2 c.

7. chopped cucumber- 1/2. c.

8. sliced black olives

9. diced avocado

10. fresh chopped tomatoes

How to make:

  1. Preheat oven to 375-degrees. Spread crescent rolls out on a baking/cookie sheet. Press edges together to form a crust– you don’t want any holes. Now bake for about 11 minutes or until crust turns golden-brown. Remove from oven and allow to cool.
  2. Combine cream cheese and ranch dressing until smooth and spread evenly with a rubber spatula over the crust. Top crust evenly with veggies, lightly pressing them down to they don’t fall off when you cut them up.
  3. Cut evenly into squares and serve! Makes appx. 25-30 squares.

Lasagna Skillet:

This recipe can feed 6 to 8 people so if you have fewer family members then make full and freeze the half.

Ingredients you need:

1. 2 pounds of ground beef, turkey thawed if frozen

2. 20 ounces of  pizza or spaghetti sauce

3.  dried oregano 11⁄2 tablespoons

4. 1⁄2 teaspoon Salt

5. onion powder 1 teaspoon

6.  garlic powder 1 teaspoon

7. 1⁄8 teaspoon cayenne pepper

8. 16 ounces of spinach

9. 1 (8-ounce) cream cheese

10. cottage cheese 1 (14-ounce)

11. 8 ounces of mozzarella cheese

How to make:

  1. At first, fry the meat in a large skillet over medium-high and heat let it brown.
  2. Now add the pizza sauce, oregano, salt, onion powder, garlic powder, cayenne. Add the spinach and stir it. This time reduce the heat to medium-low and allow to simmer.
  3. Pour the cream and cottage cheese in a food processor and process until getting a smooth texture. Add to the skillet and simmer a few more minutes.
  4. Serve with grated mozzarella.
